Emeritus, 100% Raboso, from the monks of the Praglia Abbey is the white sparkling wine obtained from characteristic red berried grapes historically grown in the area.
Fermentation in the bottle according to the typical "classic method", once also called the "Benedictine method" due to the traditional reference to the monk who refined the technique over the centuries ago. Remuage by hand and long stay on the lees (at least 30 months). Dosage 8 g/l.
Freshness and persistence, combined with aromatic complexity, personalize this wine desired by the monks with the aim of enhancing the typicality of the territory and dedicated to the abbot emeritus.
Ideal served fresh throughout the meal, even with dishes with strong flavors.
