The historical varieties apple juice (Alet Sorten) of the Novacella Abbey is made with apples from the historic garden of the Abbey: harvested only when fully ripe and processed immediately, the juice deriving from the pressing of these apples (variety Gravensteiner, Steinpepping, Nela, Grauling, Gelber Richard, Renette and others...) is particularly intense, aromatic and fruity.
