The spelt is a very resistant plant that belongs to the family of grasses. The Farro dei Colli of the Monte Oliveto Maggiore Abbey belongs to the species "Triticum Dicoccum" which is distinguished by the other qualities of spelt for the larger size of its grain and its endurance in cooking.
We recommend the Farro dei Colli in combination with legumes, especially Tuscan soups.
