White wine has always been the perfect accompaniment to fish dishes, of which the Mediterranean cuisine is very rich. The wines, however, are not all the same and the wines of the abbeys have many peculiarities. The production of wine by the monasteries was in the past necessary for liturgical celebrations. The monks therefore boast an ancient tradition in the cultivation of the vine and from this experience were born great wines, increasingly appreciated and sought after, such as the Vermentino dei Carmelitani or the Farnetino di Camaldoli.
